My first wedding cake & cupcakes project
Banana Cake and Banana Cupcakes with Chocolate Ganache and Marshmallow fondant

Banana Cupcake recipe:
Ingredients:
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 mashed ripe bananas
1/4 cup buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt

Preparation:
In a large mixing bowl, sift and combine the flour, baking powder, baking soda and salt then set aside
In a separate bowl, beat the butter and sugar until light and fluffy
Add eggs one at a time, beat for 30 seconds between each. Then add the mashed bananas
Add about a fourth of the flour to the butter/sugar mixture and beat to combine.
Add about one third the buttermilk mixture and beat until combined. 
Repeat above, alternating flour and coffee and ending with the flour mixture. 
Fill 18 paper-lined muffin cups two-thirds full.
Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. 
Remove to wire racks to cool completely.

Banana Cake Recipe:
Banana Cake:
2 cups (400 grams) granulated white sugar
1 3/4 cups (245 grams) all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs
1 cup mashed ripe bananas (about 2 medium sized bananas)
1 cup (240 ml) warm water
1/2 cup (120 ml) milk
1/2 cup (120 ml) corn, safflower or canola oil (or other flavorless oil)
1 1/2 teaspoons pure vanilla extract

Chocolate Banana Cake: 
Preheat oven to 350 degrees F (180 degrees C) and place rack in the center of the oven. Butter, or spray with a non stick vegetable spray, a 8  inch pan. Set aside. 
In a large bowl whisk together the sugar, flour, baking powder, baking soda, and salt. Set aside.

In another large bowl, whisk together the eggs, mashed bananas, water, milk, oil, and vanilla extract. Add the wet ingredients to the dry ingredients and stir, or whisk, until combined. You will notice that the batter is quite thin. 

Pour the batter into the prepared pan and bake for about 35 to 40 minutes or until a toothpick inserted in the center of the cake comes out clean.  

Remove from oven and let cool on a wire rack. When completely cooled, frost with whatever you like. ^^

**NOTE**
I am using a turbo broiler for baking. My temperature for this cake is 150 Degrees for 30 minutes. 
Sorry for my marshmallow fondant. I need more practice! heehee!

Lastyness: thank you! Thank you! Dami ko pa ippost kaso wala lang time. Tried baking na din chocolate crinkles, banana chocolate chip cookies. hopefully next week maka pag blog na ako ulit. Daming story nyan cake na yan sinira pa nung waiter. Heehee!

You have the best recipes for turbo broiler cakes! how do you make the surface of the cupcakes even? (Surface not slanting towards the middle of the turbo broiler cover)
