Cinnamon Apple Cupcakes

Cinnamon Apple Cupcakes

Ingredients:
2-1/4 cups of flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
1/2 cup unsalted butter
1-1/2 cups sugar
2 tablespoons brown sugar
2 eggs
1 teaspoon vanilla
4 cups shredded apples

Preparation:

  1. Preheat oven to 350 degrees
  2. Line cupcake tins with paper or foil liners
  3. In medium bowl mix flour, baking soda, cinnamon, nutmeg, and salt
  4. In a large bowl mix butter and sugar together until light and fluffy
  5. Mix in eggs and vanilla, gradually adding flour until all well mixed
  6. Fold in apples
  7. Divide batter into 18-22 cups
  8. Bake for 18 to 20 minutes, until tops spring or an inserted toothpick comes out clean
  9. Cool cupcakes before frosting and decorating

Tips:
If you're using a turbo broiler: Preheat the turbo broiler 150 degrees then bake for 15 minutes.
