Banana Cupcake

Banana Cupcake
Ingredients:
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 mashed ripe bananas
1/4 cup buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt

Preparation:
In a large mixing bowl, sift and combine the flour, baking powder, baking soda and salt then set aside
In a separate bowl, beat the butter and sugar until light and fluffy
Add eggs one at a time, beat for 30 seconds between each. Then add the mashed bananas
Add about a fourth of the flour to the butter/sugar mixture and beat to combine.
Add about one third the buttermilk mixture and beat until combined. 
Repeat above, alternating flour and buttermilk and ending with the flour mixture. 
Fill 18 paper-lined muffin cups two-thirds full.
Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. 
Remove to wire racks to cool completely.

Tips:
If you're using a turbo broiler: Preheat the turbo broiler 150 degrees then bake for 12-15 minutes.
Buttermilk: 1/4 cup of milk then add 1 teaspoon of white vinegar
